As summer ends and the leaves start to turn, we find ourselves craving the flavors of autumn—salmon, ikura (salmon roe), aromatic mushrooms, sweet kabocha, and crispy lotus root. Autumn is often called 'the season of hearty appetites. This time, we offer a selection of five appetizers, each featuring autumn ingredients and plenty of dashi and fish from Toyosu fish market.
