Yosenabe(Hot Pot)

Ingredients

[Serves 4]

Broth Ingredients
• 1000 grams Water
• 4 bags Dashi Packs (Any) 
• 50 grams Light Soy Sauce
• 50 grams Mirin
• 50 grams Cooking Sake
Nabe Ingredients
• Napa Cabbage
• Green Onions 
• Shiitake Mushrooms
• Shimeji Mushrooms
• Chicken Thighs
• Cod Fillets
Dipping Sauce Ingredients
• Ponzu Sauce
• Yuzu Kosho Pepper

Prepare the nabe ingredients by cutting them into bite sized pieces.

In a pot, combine all the broth ingredients and bring to a boil.

Once it's boiling, reduce the heat and simmer for 7 minutes.

Remove the dashi packs.

Add the meat and any dense vegetables that take longer to cook into the pot first.

Remove any impurities that surface with a skimmer or spoon. Add rest of the ingredients and simmer them until they soften.

Serve the hot pot and enjoy it with ponzu sauce and yuzu kosho pepper according to your preference.

Tips

Par-boil meat and fish for reduced impurities.
