Soba Tsuyu(Hot Soba Broth & Cold Soba Dipping Sauce)

Ingredients

[Serves 2]

Hot Soba Broth Ingredients
• 400 grams Water
• 4 bags Tokyo Dashi Packs 
• 48 grams Soy Sauce
• 8 grams Sugar
Cold Soba Sauce Ingredients
• 400 grams Water
• 4 bags Tokyo Dashi Packs 
• 160 grams Soy Sauce
• 54 grams Mirin

[Hot Soba] 01

Add dashi packs to the water and put on the heat. Once it comes to a boil, simmer on medium heat for 7 minutes, then squeeze and remove the dashi packs.

[Hot Soba] 02

Add soy sauce and sugar in the dashi broth, and let it come to a boil, then keep warm. 

[Hot Soba] 03

Serve it over the soba in a bowl. The broth should be fairly salty. 

[Cold Soba] 01

Add dashi packs to the water and put on the heat. Once it comes to a boil, simmer on medium heat for 7 minutes, then squeeze and remove the dashi packs.

[Cold Soba] 02

Add soy sauce and mirin in the dashi broth, and let it boil. 

[Cold Soba] 03

Remove any foam that surface with a skimmer or a spoon.

[Cold Soba] 04

Let it cool and serve in a cup. Dip your soba in the sauce.
