Niboshi Potato

Ingredients

[Serves 2]

• 500 grams Baby Potatoes
• 20 grans Dried Anchovies
• Preferred amount of Boiled Snow Peas
• 1 bag Dashi Pack (Any)
• 1 bag Standard Dashi Pack
• 36 grams Soy Sauce
Soup Ingredients
• 100 grams Water
• 18 grams Soy Sauce
• 18 grams Mirin
15 grams Cooking Sake
• 9 grams Sugar

Combine and mix the soup ingredients in a bowl.

Wash the baby potatoes and cut any large ones in half. Place them in a microwave-safe dish and heat in the microwave for 6 minutes.

Heat sesame oil in a frying pan and sauté the microwaved baby potatoes until they are browned.

Add the soup from Step 1, dried anchovies, and a dashi pack to the frying pan. Cover with a drop lid and simmer.

When the liquid has evaporated, add 36 grams of soy sauce and mix everything together.

Transfer to a serving dish, and garnish with boiled snow peas.

Enjoy.

Tips

If dried anchovies are big, you can soak them in water for 10 minutes to make them soften. If the dried anchovies are large and hard, soak them in water for a few minutes to soften them.
