Dashi Tororo

Ingredients

[Serves 2]

100 grams Japanese Mountain Yam (Yamaimo)
• 1 bag Standard Dashi Pack
• 150 grams Water
• 1 bag Dashi Pack (Any)
• 18 grams Light Soy Sauce
• 36 grams Sugar

Put dashi pack, water and light soy sauce, sugar in a pot and bring to a boil, simmering for 7 minutes to make a strong broth.

Grate the Japanese mountain yam.

Gradually add the cooled dashi broth to Step 2, mixing it in little by little.

Garnish with wasabi and green onions as desired, and it's ready to serve.

Tips

Using a fine grater will result in a smooth texture.
