Oden(Japanese Oden Stew)


[Serves 6]

Dashi Ingredients
1600 grams Water
• 7 bags Tokyo Dashi Packs
• 100 grams Light Soy Sauce
• 100 grams Mirin
• 10 grams Sugar
• 2 grams Salt
Oden Ingredients
• 1/2 of a Daikon Radish
• 6 Eggs
• Other preferred ingredients: Fried Fish Cakes, Konjac etc.


Prepare the oden ingredients by parboiling separately the daikon radish, boiling and peeling the eggs.


In a pot, combine all the dashi ingredients and place it on the heat.


Once it boils, simmer on low heat for 7 minutes, squeeze the dashi packs and remove them. Then, add the oden ingredients.


After adding the oden ingredients, bring to a boil again, and simmer on very low heat for 30 minutes.


Let it cool for a few hours to let the flavors infuse.


Reheat and serve. You can enjoy it with mustard and yuzu pepper.


You can prepare the oden in the morning and enjoy at night to let the flavors infuse. If the broth reduces too much, add water or more dashi to adjust.
