To reduce food waste, this dashi is crafted by combining vegetable trim from the Eleven Madison Park kitchen with our traditional dashi ingredients.


Dried vegetable trim from Eleven Madison Park’s exceptional king oyster mushrooms, leeks, and brussels sprouts form the base of this complex vegetable dashi.

Centered around the deep umami of king oyster mushrooms, it’s layered with the refined, glutamate-rich Rishiri kombu, the sweet earthiness of shiitake, the natural sweetness of Awaji Island onions, the gentle bitterness of brussels sprouts, and a touch of garlic that adds structure to the flavor.

This dashi serves as a flavorful base, enriching the umami of dishes across any cuisine.

How to Make Dashi

Put a dashi bag in a saucepan and fill it with water

Bring the water to a boil and continue boiling at medium heat for 7 to 8 minutes to extract the dashi

Turn off the heat and remove the dashi bag

How to extract dashi?

Place a dashi bag in a saucepan and fill with water. Bring to a boil, then simmer at medium heat for 7 to 8 minutes to extract the flavor. Turn off the heat and remove the bag.


You can also open the bag afterward and roast the remaining ingredients with soy sauce, sugar, mirin, and sake to make a simple furikake for rice or onigiri.
