Kaga-Boucha is a specialty tea in the Kaga province where the ancient city, Kanazawa, is located. This aromatic and elegant roasted green tea is made with twigs from the first or second flush of green tea. Tea twigs generally have more sweetness and far less bitterness and astringency than leaves. In Kaga they roast the twigs slowly at low temperatures in order to draw out the beautiful qualities of the twigs.
