We created this canister in two limited-edition colors. Each designed to store dashi, coffee, tea, or any ingredient you want kept dry and fresh. Each includes an inner lid for added protection.


The colors draw from dashi's essential elements. Konbu Green reflects the cold northern seas of Hokkaido where our kelp is harvested. Katsuo Red honors the bonito that anchors our craft.


Inside: five dashi varieties. Premium, Classic, Kyoto, Tokyo, and Vegetable. Three packs of each. Fifteen total. The selection is fixed and cannot be modified.


Kato Seisakusho has been making tea canisters since 1895. Their work protects contents from moisture. Ours will store dashi, nori, coffee, granola, pasta, konbu, or whatever your kitchen requires. Use it however fits your practice. It's built for items that need to stay dry and fresh.

How to Make Dashi

Put a dashi bag in a saucepan and fill it with water

Bring the water to a boil and continue boiling at medium heat for 7 minutes to extract the dashi

Turn off the heat and remove the dashi bag

Soft water is essential for drawing out the clean, deep flavor of dashi, especially in kombu-based blends.


While Japan naturally has soft water, many regions in the US do not. Hard water can suppress umami and even introduce bitterness.

How to extract dashi?

Place a dashi bag in a saucepan and fill with water. Bring to a boil, then simmer at medium heat for 7 minutes to extract the flavor. Turn off the heat and remove the bag.


You can also open the bag afterward and roast the remaining ingredients with soy sauce, sugar, mirin, and sake to make a simple furikake for rice or onigiri.
